Eat the rainbow!

Phytonutrients (also called phytochemicals) are chemical compounds that occur naturally in plants. Researchers estimate up to 40,000 phytonutrients will someday be fully catalogued. Of all the phytonutrients, we probably know the most about carotenoids which  are responsible for giving fruits and vegetables their bright colors. When we eat fruits and vegetables we take in these phytonutrients and research suggests they provide us with powerful, color-coded protections.
